This November, Cocoon Supper Club gathers for a night of food, wine, and story. In partnership with PM Wines, we’ll welcome Darek Trowbridge, winemaker and farmer behind Old World Winery, one of the Russian River Valley’s most soulful natural wine producers.

Darek’s wines have graced Cocoon tables all summer — from Sonoma to Santa Fe — and now we bring the story full circle with an intimate dinner celebrating the land, the vines, and the people who tend them. His approach to winemaking is rooted in minimal intervention and deep respect for nature, letting each bottle speak in its own voice.

At The Parador, we’ll share a seasonal Cocoon menu paired with a curated selection of Old World wines. Expect a cozy, communal table filled with honest food, thoughtful conversation, and the slow kind of magic that happens when people gather with intention.

About Old World Winery

Old World Winery is a family-run, regenerative winery in California’s Russian River Valley. Founded by Darek Trowbridge, it carries forward four generations of grape-growing and winemaking. The wines are made using only native yeasts, hand-harvested fruit, and no chemical additives — pure expressions of time, place, and care.

Pastoral winemaker and proprietor, Darek Trowbridge, has 20+ years of hands on experience in the art and science of vineyard management, grape production, and natural winemaking. His passion is inviting nature into his winemaking. His processes are simple and direct and eliminates the need for any manufactured (man made) chemicals. This process involves effort and shepherding but not manipulation.

About Cocoon
Cocoon Supper Club creates immersive, seasonal dining experiences that connect people through food, story, and sensory play. Each month, a new table unfolds — from mystical tarot feasts to vineyard dinners — inviting guests to slow down, savor, and be surprised. 

Marijke Uleman is a food experience designer, chef, and storyteller based in Santa Fe. Her work explores how food connects us, to place, to each other, and to ourselves. Through her project Cocoon, she creates multi-sensory dining experiences that blur the line between art and meal, inviting guests to slow down, taste deeply, and find meaning in the moment.

Raised in California wine country and shaped by a love of local ingredients, Marijke’s cooking is equal parts grounded and imaginative. Whether she’s cooking over fire in the desert, serving dinner in a vineyard, or designing a menu around the stars, her food always tells a story — one meant to be shared.


About PM Wine Distribution
Martha Aguilar and Paul Greenhaw are the passionate force behind PM Wine Distribution, a unique venture exclusively dedicated to bringing natural wines to New Mexico. After relocating from New York City nearly eight years ago, they sought to share the distinctive flavors and ethos of natural wines with their new community.

Having been immersed in the vibrant, emerging natural wine scene of NYC in the late '90s and early 2000s, Martha and Paul were deeply influenced by the movement’s organic, artisanal, and anti-commercial spirit. They believe in simplicity and authenticity: “You either get it or you don’t.” They know natural wine isn’t for everyone, and they celebrate that. Small, rebellious, and sincere, their selection honors producers who favor minimal intervention and true expression. Martha and Paul focus on connecting curious drinkers and adventurous retailers with wines that challenge the mainstream and reward the open-minded.
