EMBERS is a national fine dining series honouring ancestral ingredients and traditional ways of cooking by a rotating collective of the country's best chefs.
We are the EMBERS, the hottest part of a fire. We represent our ancestors and symbolize the enduring power of our diverse culinary legacies.

On Sunday, April 14th 2024, we hosted the first edition of the EMBERS experience at the highly acclaimed and Michelin star-rated Quetzal restaurant in Toronto. It was an electrifying and immersive experience featuring an artfully curated six-course pairing menu and welcome tea service designed by three of the country’s finest chefs. Each guest was immersed in a feast of flavours, storytelling, and culture for a truly unique evening.
"It was such a beautiful dinner. I never thought it would ever eat at a Michelin star restaurant, let alone see Indigenous cuisine so proudly displayed at an event like this. I might be biased but my favourite dish by far was the crispy sisip (duck). Thank you for letting us witness Indigenous cuisine being honoured and enjoyed the same way we enjoy our sustenance."  - G.F
"It was such a great evening connecting with friends, and the stories shared at the dinner deeply moved me. The Quetzal staff was phenomenal! Being a part of the emotion, vulnerability, and honesty was a humbling experience that reinforced my commitment to being an ally for the community and a champion of this extraordinary initiative." - C.B

Meet our inaugural chef collective who crafted an intersectional menu honouring traditional foodways.
Chef Steven Molnar
QUETZAL
Chef Molnar's restaurant career began at age 17 at Toronto's Nota Bene. Later, he enrolled in the Culinary Arts program at George Brown College and, within his first year, was offered a coveted opportunity to study at the Institut Paul Bocuse in France. He refined his craft while abroad and returned to Canada, putting his skills to work at Restaurant Toqué and Bar Raval before accepting the Executive Chef position at Quetzal. Chef Molnar’s love of regional Mexican cuisine has produced stellar results, with the restaurant receiving and retaining one Michelin Star in 2022 and 2023 as well as the Michelin Toronto Exceptional Cocktail Award in 2023.
Chef Raquel Fox
ISLAND GURL FOODS
Chef Fox grew up in The Bahamas where she learned the nuances of cooking and eating from the land and sea from her grandmother. A restaurateur, cookbook author, and celebrity chef, she loves introducing the uninitiated to the complexities of Caribbean cuisine during her segments on Canada’s most popular morning television shows. Off the air, Chef Fox is a celebrated alum of George Brown College as well as the creator and instructor of its first ever Caribbean Course. She received the Waterfront Award for Culinary Excellence in 2023.
Chef Scott Iserhoff
PEI PEI CHei oW
Chef Iserhoff is a Mushkego Chef from Attawapiskat First Nations, located on the western shores of James Bay. He comes from a Swampy Cree Nation that values food, hunting, and traditional open fire cooking. A passionate creator with a degree in Hospitality Management from George Brown College, Chef Iserhoff opened his Indigenous food and education company, Pei Pei Chei Ow in Edmonton in 2021. Soon, both he and the restaurant received a string of accolades including the Best New Restaurants in Canada Award in 2022.
Help pave the way for the next generation.
As we seek to honour the ancestors and create opportunities for underrepresented talent to connect and collaborate, each edition of EMBERS will feature the launch of a culinary school scholarship for students of equity-deserving backgrounds.

This year, we were proud to partner with George Brown College to award multi-year scholarships to three Black, Indigenous, and Latinx students for the 2024-2025 school year. If you'd like to contribute to this legacy of excellence by making a donation to our scholarship fund, email [email protected].
