ABOUT THE SPEAKERS Elsa & Jacob Fokken, Songbird Kombucha Elsa and Jacob Fokken are the founders of Songbird Kombucha, a Sioux Falls-based craft kombucha company born from a personal journey to replace soda with a healthier alternative. What began as a fun hobby fueled by curiosity and experimentation grew into a business during the COVID-19 pandemic, when they decided to turn their passion into a way to serve their community. Today, they craft small-batch kombucha while continuing to share their love of health and wellness. Mary Campbell & Corey Gerlach, The Breaks Mary Campbell and Corey Gerlach are the co-owners of The Breaks Coffee Roasting Co., which they founded in 2015 as a direct-to-consumer coffee roaster. Since expanding into wholesale roasting in 2016 and opening their first cafe, they have grown The Breaks into a well-established local business rooted in quality, community, and hospitality. Today, they continue to expand operations while remaining committed to their loyal customers and strengthening their community impact.
